On Holy Thursday and Good Friday, we bring you special dishes made from dried hake, prepared according to ancient, almost forgotten recipes from our region. In a time when tradition is cherished and simple, original flavours are returned, we want to introduce you to the method of preparation that was once passed down from generation to generation.
Our hakes are caught in the open sea around Rogoznica, then salted and dried in the bora wind – just as it was done in the past, without rushing. It is this natural process that gives them a recognisable, intense flavour that is considered a true gastronomic delight of old Dalmatian cuisine.
